THIS IS ONE OF MY FAVORITE EGG HAND ME DOWN RECIPES FROM MY SPANISH GRANDMOTHER, YOU CAN EAT IT WITH BREAD OR RICE. WE USED TO BUY FRESH SUN RIPENED TOMATOES FROM THE FARMERS HERE IN MARIKINA, BUT AT LAST COOKING THIS IS SO MUCH EASIER WITH DONA ELENA CANNED TOMATOES.
INGREDIENTS:
6 LARGE EGGS
1 CAN DONA ELENA DICED TOMATOES ( DRAINED)
1 LARGE YELLOW ONION (cHOPPED)
2 TBSP DONA ELENA OLIVE OIL
SALT
PREPARATION:
BEAT EGGS IN A LARGE BOWL. HEAT OIL IN A SKILLET, ADD CHOPPED ONIONS THEN THE TOMATOES. AFTER ABOUT 30 SECONDS, POUR EGGS INTO THE SKILLET STIRRING FREQUENTLY UNTIL EGGS ARE SCRAMBLED AND SET, BUT STILL MOIST ADD SALT TO TASTE.
