Pinoy Pesto
Ingredients:
1/2 kilo Fettucini Noodles (cook according to package directions, you may use othe pasta variations)
1 cup malunggay leaves
2/3 cup Doña Elena extra virgin olive oil
1/3 cup cashew nuts (lightly toasted)
10 grams Maggi Magic Sarap
100 grams chopped garlic
1/8 tsp oregano powder
1 tsp salt
60 grams grated cheese
Optional: Kesong puti (crumbled) or Parmesan Cheese (for Topping)
Procedure:
Heat a non-stick pan, add in 1/3 cup olive oil then saute garlic until light brown. Saute in cashew nuts. Add in malunggay leaves, salt, oregano powder, and cook for a minute or until malunggay is cooked. Remove from pan. Pour the rest of the olive oil in a blender, add in cooked mixture and cheese and process until smooth. Toss in cooked pasta and serve immediately.
